10 ml medium mustard, 100 g grated cheese
10 g fresh parsley, 50 g baby spinach
4 g vegetable broth powder, 150 ml water
1 tbsp oil, 1 tsp butter, 100 g crème fraîche
Salt & pepper to taste
Step-by-Step Instructions
1. Prep Work
Preheat oven to 220°C (430°F). Thinly slice the potatoes, chop remaining vegetables. Rinse lentils and chop parsley.
2. Sauté
Sauté the onion in oil until translucent. Add carrot, bell pepper, and mushrooms; cook for 5 more minutes. Press in the garlic.
3. Cook the Lentil Mix
Add lentils, tomato paste, soy sauce, mustard, broth powder, and hot water. Season with salt, pepper, and spices. Stir in spinach and parsley, and simmer for 3–4 minutes.
4. Assemble the Casserole
Mix the lentil filling with crème fraîche and transfer to a baking dish. Layer the potato slices on top and dot with butter.
5. Bake & Broil
Bake for 25–35 minutes until the potatoes are golden and tender. Sprinkle cheese on top and grill for 5 more minutes until bubbly and brown.
6. Serve: Garnish with fresh parsley and enjoy warm.
